How Fresh is Fresh?

Coffee Plant does all its own roasting and as we have a relatively small roasting machine this means we can be sure our coffee is always roasted in the last week or two.

If a batch is not sold out by then we put it into Bargain Blend.

But are we right to do this?

Recently we sent some Old Brown Java back from the shop as it did not sell fast enough. But on tasting, it was absolutely delicious.

What do you think? Is coffee sometimes improved by ageing after it is roasted? Or was this a fluke
